Every year on December 13, Sweden celebrates St. Lucia’s Day, a holiday filled with light and warmth, in contrast to the cold and dark of the Nordic winter. A symbol of hope and resilience, this tradition brings Swedes of all ages together in moments of sharing and celebration. History Saint Lucy’s Day originated with Lucia of Syracuse, a 3rd-century Christian saint in Sicily known for her faith and sacrifice. Legend has it that she wore a crown of candles to light her way while bringing food to Christians hiding in the catacombs. In Sweden, the holiday was introduced in the Middle Ages, but it was in the early 20th century that it took on the modern form we know today. It symbolically marks the victory of light over darkness in a country where, in December, the days are extremely short. Traditions of Saint Lucia The feast of Saint Lucia is a ray of sunshine in the long Swedish nights of December. With its songs, its culinary traditions and its human warmth, it invites everyone to refocus on the essential: shared light and joy. It is rich in symbols and rituals. Lucia and her Crown of Light : A young girl is chosen to embody Lucia, bearer of light. She wears a white dress with a red ribbon and a crown decorated with candles. Lucia is accompanied by a procession of young girls and boys also dressed in white. Together, they sing traditional hymns, including the famous song "Sankta Lucia". Sylvain Roucayrol, the resident chef at the Tuba Club in Marseille, shares his recipe for Madeleines and Kalamansi-Yuzu jam. A dessert with a delicious citrus flavor and hints of honey to enjoy at tea time. Recipe for 6 people Cooking time: 80 minutes - Preparation the day before Ingredients Madeleines 200 g hazelnut butter 200 g flour 12 g baking powder 3 eggs 125 g brown sugar 1 g vanilla 4 lemons 60 g milk at room temperature 80 g honey Yuzu-Kalamansi Marmelade 300 g fresh Yuzu 100 g Kalamansi 100 g sugar 200 g acacia honey Preparation Marmelade : Wash the citrus fruits under cold water Cut in 2 and remove the seeds Cut into small pieces and add to a wok with the sugar and stew for about 30 min Add the honey and cook again over low heat for 45 minutes Keep cool Madeleines : Melt the butter into a hazelnut shape Pour the flour, baking powder and lemon zest into a mixing bowl Add the milk and honey, then the vanilla, and add the hazelnut butter, mixing gently. The Lodge at Marconi pays homage to the Third Bay style, a modernist architectural style dating from the 1945-1980 period that has its roots in the San Francisco Bay Area. The 25 hectares surrounding the Lodge and the atmosphere of the Summer Camps of the 70s have defined the decorative style of the hotel. The result is a palette of natural colors that are printed in sienna, ochre, mahogany or deep olive green. Throughout, oak and cedar wood have been favored to reinforce the desired natural and warm side; the benches, headboards or door frames are custom-made by local artisans, some lighting and accessories are also dressed in wood. As part of Home Studios' desire to honor and preserve the character and heritage of the site, three bathrooms have kept their original ceramics. Alice Tourbier and her husband are developing luxury spa hotels located in the middle of French vineyards. Les Sources de Caudalie in Bordeaux, les Sources de Cheverny in the Loire Valley and two new establishments to come, are real treasures where the art of living and well-being are kings. Alice was kind enough to reveal all her beauty tips to us. INTERVIEW 1 - Hi Alice, can you quickly introduce yourself ? " I am Alice, 47 years old, mother of 2 teenagers. I thrive as an entrepreneur of the art of living. With my husband, I am developing "Les Sources", a collection of 4 hotels, restaurants and spas in the French vineyards. We were lucky enough to start with Les Sources de Caudalie in Bordeaux, our eco-labeled palace of vineyards. Then we opened in 2020 Les Sources de Cheverny in the Loire Valley, and today we are under construction in Burgundy and soon in Alsace. These are unique addresses with the attention of a palace and the warmth of a family home. The nature that surrounds our hotels is part of the experience. " 2 - What are your cult beauty products, the basics? " I have aged at the same time as the Caudalie range that my sister created 30 years ago now! I started with creams for young skin, then the Vinoperfect anti-spots for pregnant women and today I am a fan of their Premier Cru range, in particular le sérum and la crème . " 3 - What are your morning and evening skincare routines? " It has to go quickly! I probably don't take enough time for my skin, but I'm lucky because my skin is dense and ultimately not very sensitive. " 4 - Do you have a beauty secret? A homemade recipe? " I have been taking a cocoa collagen from Aime or Apnée for over 3 months now. I am not yet totally convinced by the benefits on my skin but I have become addicted to my morning hot chocolate which I make with a milk frother. The best beauty secret for me is… having clean hair! Honestly it changes my day, I really feel better with shiny hair. " 5 - Did you borrow a product or ritual from your mother or grandmother? " The ritual of drying my hair upside down. It has become the perfect opportunity to stretch my back and the back of my calves. Plus, I feel like I’m doing yoga! I always have SPF 50 in my handbag with a comb and a lip gloss that I whip out depending on the sunny weather or my hair is messy. I can’t manage to apply SPF 50 every day. And yet it was one of my mother’s beauty tips . " 6 - What is your latest wellness discovery that you love? " I travel to hotels 2 or 3 days a week, but our offices are in Paris and whenever I can, I sign up for a sports class at lunchtime. I will either cycle at Dynamo or sweat in Pilates class at The New me , or I practice yoga with Flore thanks to the classes offered by our Coworking space The Bureau. This sporty breathing has become key for me. I can no longer manage long days in the office without it. " 7- What is your favorite beauty addresses? " I love going to David Lucas , the most talented and friendly hairdresser in Paris. David has become a very good friend. But I fear I am not a good ambassador: I only have my hair done well when I leave his place! The rest of the year, my home blow-dry is done quickly, badly…" 8 - Where do you like to recharge/recover yourself? " To recharge my batteries, it's obviously Les Sources! It's a pleasure to put myself in our customers' shoes and to be able to take full advantage of our homes. It's harder to find availability in high season, but as soon as business slows down, Jérôme, my husband and I sleep in our Les Sources hotels. I enjoy being a guinea pig and testing out new hands or protocols at the Vinotherapie spa. I sometimes take part in the yoga retreats that we organize, particularly at Les Sources de Cheverny with great teachers. Otherwise, competitive intelligence is also a fun part of my job! Emmanuel Perrodin, the resident chef at the Lilou Hotel in Hyères, Var, was kind enough to share with us his recipe for Sicilian Pistachio Tart, Orange Blossom Ice Cream and Rocket. A creamy and sublime Mediterranean recipe that brings us a little sweetness at the end of summer. Recipe for 4 tartlets Cooking time: 35 minutes - Preparation the day before Ingredients 200 g of T55 flour 100 g of icing sugar 50 g of sugar 3 eggs 170 g butter 175 g liquid cream 80 g white chocolate 65 g almond powder 25 g pistachio paste handful of pistachios 25 g rocket 1 lime liquid honey or glucose pepper salt Preparation The day before Whipped ganache with rocket : Boil 60g of whole liquid cream with 25g of pistachio paste, 6g of glucose or honey. Pour the boiling mixture over 80g of white chocolate. Once the chocolate has melted, mix well and add 150g of cold whole liquid cream. Leave to stand overnight Almond cream : Gently mix 50g of softened butter with 50g of sugar, 25g of almond powder, 25g of pistachio paste, 25g of liquid cream, 1 egg, 1g of pepper and 25g of chopped rocket. Do not froth the mixture Mix the flour with the icing sugar, 40g of almond powder and a pinch of salt Add 120g of diced butter. Rub in by hand or with a mixer at very low speed. Add 2 beaten eggs. Work the dough (but not too much) so that it is smooth. Leave to rest for an hour before rolling out Shape the tartlet bases and leave them to rest in the fridge for another hour. Then cook them for 15 min at 170°C Then add the almond cream, filling the bottom of the tart three-quarters full. Sprinkle with a little crushed pistachios. Bake again at 170°C for 15 to 20 min Leave to cool.
